Fix returning to the title screen from a game

Spectrum (Jonathan Dove) requested to merge spectrumuk2/srb2p-spectrum:fix-exitgame into next

Globalizing server and gamemap seemed to break returning to the title screen from a game. This adds a GameQuit hook to set server to false and gamemap to 40.
